Well, the LLC filing paperwork has been submitted and we are closing in on a location. I'd say it's about time to let you, the fans, in on more of our vision.
The vision for Scallywag has 2 distinct parts. The first part is our core vision and will not change. The second is largely location dependent. So, without further ado:
Our core vision is based around the way that Chicagoland is deeply intertwined with the music, arts, and DIY cultures. Taking our cues from this, and at least one of our founders' background in these local cultures, Scallywag Brewing has completely embraced these ideals. From our homebrew roots, to our decor, to our events we will be tapping into local artists and artisans, both to move forward and to give back to the communities that have shaped us. Plans are already in place to offer a space to allow local artists to display and sell their works to the public. We'll be exploring the idea of allowing performers in to entertain our patrons. All of our design choices will be inspired by and connected to Chicagoland.
The second part of our vision is based upon location. The locations that we are currently looking at are all very close to commuter rail stations. As such, we have decided that we will be partnering with a local coffee roaster to offer commuter coffee for the morning commute. This may or may not expand into a more full-blown coffee shop within the taproom, depending on demand.
Keep your eyes peeled for announcements as things progress in the coming months. our goal is to have the taproom open by the end of this year.
